Recipe: Gluten Free Cuban Black Beans & Rice

Let me start off by saying that my husband decided that in 2014, he would start cooking 2-4 times per month. The best part, he has been keeping up with this rule he himself created! I definitely support this resolution ;)

He found another great recipe on Real Simple (see previous recipes here and here) and decided to mix it up to fit his tastes. 

I give you Cuban Black Beans & Rice:

Ingredients

  • 1 cup long-grain white rice
  • 1 tablespoon olive oil
  • 1 onion, chopped (we did not use)
  • 1 bell pepper, cut into 1/4-inch pieces (we did not use)
  • 2 cloves garlic, chopped
  • kosher salt and black pepper
  • 1 teaspoon ground cumin
  • 2 15.5-ounce cans black beans, rinsed
  • 1 teaspoon dried oregano
  • 1 tablespoon red wine vinegar
  • 4 radishes, cut into 1/2-inch pieces
  • 1/4 cup fresh cilantro

Directions

  1. Cook the rice according to the package directions.
  2. Meanwhile, heat the oil in a saucepan over medium-high heat.
  3. Add the onion, bell pepper, garlic, 1 teaspoon salt, and ¼ teaspoon pepper and cook, stirring occasionally, until softened, 5 to 7 minutes.
  4. Stir in the cumin and cook for 1 minute.
  5. Add the beans, oregano, and 1 cup water. Simmer, covered, for 10 minutes.
  6. Add the vinegar. Smash some of the beans with the back of a fork to thicken. Serve over the rice. Top with the radishes and cilantro.

He also served this with chips and guacamole. What can I say, my hubby is turning into one heck of a great cook!

Rocked it & Swapped it

Because Lisa Loves Peter Pilotto for Target

Did anyone else run out on February 9th and buy pieces from the Peter Pilotto for Target collection? I did! And I had to stop myself at the four items I got. I actually wanted more but they sold out of the dresses on my wish list. Thankfully, they have restocked and you can find most items now.

I got this blouse with the matching skirt, but wanted to style it a bit more casual for this Sunday afternoon. And can we talk about my hubby's new Ray Bans? Since I gave them to him for his b-day, I feel like I can borrow then whenever I want. Wait, isn't that how marriage works? What's mine is yours! ;)

Because Kaitlyn Wore Black & White



This necklace, again? Yes, you got it...this necklace, again. Sorry not sorry -- it is my go-to statement piece because it literally makes everything look better. I can pair it with a gray graphic t, a cocktail dress or even my pajamas (as SJP would) and feel just as stylish in any of those choices because of its luxe detail. 


I also really like this black and white bag that Lisa swapped me so I decided to style everything around that theme for the NAPW Chicago event we participated in - minimalist with a pop of print on the shoes and color on the lips.

Peaked my Pinterest: Romantic Side Braid

You all know by now how much a love a great braid. I pinned this on Pinterest a few months ago and waited until I got my new Hair by Suzie extensions to try it out.

Here is my take on a romantic side braid:

1 & 2) Create a side part and pull all hair to the opposite side.
3) Begin a regular French braid at the top, near the part.
3) Continue creating the French braid along the side/hairline moving towards the ear.
4) Add hair from the opposite side by taking horizontal sections and bringing them around to the front where the braid is located.
5) Finish braid and secure with hair tie. Begin to pull and loosen braid. Loosen braid to desired size.
8) Spray with finishing spray. I also added a bobby pin or two down the center of the braid to keep a few fly-aways in place.

Rocked it & Swapped it: Remix

Who isn't mad for plaid? This print was everywhere in fall 2013 whether it was paired with a sequin skirt or layered under a vest so when I saw this blouse at Target I didn't think twice about it's place in my closet. I see plaid as a wardrobe staple so I plan to get many more wears out of this beauty. 

This first time I wore it was to a pumpkin patch with the family. The second time, to a spa event on a weekend and both times it was the perfect piece for the event. When Kaitlyn wore the blouse to meet Cameron Diaz, she added a cute knit vest over it. I love how this print works with so many colors and styles!

Because We Went to Family Brunch!

Lisa and her hubs have birthdays a week apart, so each year, we look forward to a double celebration! This year, my Parents hosted a brunch at home which was more elaborate than any restaurant I've ever been to, but that's not surprising if you know my Mom…


In addition to the fact that she's an absolutely amazing cook, she also has a degree in Hotel Management and ran her own event planning business for years, so she is the ultimate when it comes to party planning. 

No matter what size soiree she's hosting, I've always admired that she is able to make everybody comfortable and at home. Personal touches like chalkboard cups, delicate name tags and bright flowers make us all feel so welcome. She has some great entertaining ideas which you can follow along with on her blog.

In other exciting news, we also unveiled a big surprise to our mom (slash Mom-in-law)... We booked a girls weekend in Nashville for her Birthday and what better what to let her know than by donning foam cowboy hats?

We are all huge fans of the ABC show so we thought it would be the perfect getaway to let loose and celebrate our Mom, someone is always putting others first. Judging by the screaming and sweating, I think it's safe to say she was excited ;)

Because Kaitlyn Celebrated Valentine's Day

This was the 7th Valentine's Day with my husband but our first one as husband and wife, so we celebrated with a fancy night out. We go to dinner every year on this day and this time, he surprised me with reservations to Eddie Merlot's which is now one of our new favorite restaurants. 

They specialize in steak and seafood so ordered asian-style calamari to start which was addicting…I will go back just for another taste of that sauce. Our main entree's were just as delicious, as we each ordered a different cut of steak and paired it with a great Malbec wine…full bellies and lots of laughs, I couldn't have asked for a better night.

And let's be honest, Valentine's Day shouldn't be all about the ladies…instead of flowers and candy, I went with beer and bacon…beer and bacon cupcakes, that is. Two of my husband's favorite things combined in a sweet and savory dessert? I figured it was a sure bet ;)



The recipe called for an IPA so I went with Red Hook and the you could definitely taste it in the mix and frosting. I topped the bacon with brown sugar and cooked it in the oven for a few minutes, making it the perfect candied topping. I would definitely recommend these for the man in your life!

Because Lisa Loves Nautical Knits

I recently saw this nautical knit at The Limited. I have not shopped there in years, but this was an item I could not pass up! I love it because it can be worn year round. It was cozy yet chic when paired with boyfriend denim and heels on this winter afternoon.

I also can't wait to wear it in spring with white denim or on a summer night with cutoffs!
