Recipe: Avocado Turkey Bacon Burgers

Sometimes I forget I have to make dinner. OK, that sounds bad, but it's summer so the kids are home all day and we are go, go, go! Generally around 3:00 pm, at least twice a week lately, I realize I have not planned a meal. Enter avocado turkey bacon burgers.

Sometimes you need to improvise. For example, this day I had ground turkey, an avocado, bacon, a tomato, some spices but no buns. But I had bread and butter and garlic, so garlic bread toast it is!

Here is what you will need:

-Ground turkey
- 1 Avocado, diced
- 3 Splashes of Worcestershire sauce
-Sea salt to taste
-Black pepper to taste
-Onion or onion powder to taste
-Cheese (optional)
- Bacon (optional)
-1 Tomato (optional)

Directions:
1) Mix ground turkey, avocado, Worcestershire sauce, salt and pepper.
2) Form into patties.
3) Grill.
4) While burgers are on grill, fry bacon on stove top.

Garlic Toast:
-bread (we used whole wheat and gluten free)
-butter or margarine
-garlic powder

Directions:
1) Preheat oven to 350 degrees.
2) Line a cookie sheet with aluminum foil and lay out each slice of bread.
3) Put butter on each slice and sprinkle with garlic powder.
4) Put in oven for 7 minutes then broil an additional 2-3 minutes

Assemble the burgers by adding cheese and tomatoes too!

I have to say, no one thought I forgot dinner this night! In fact I've made it again since using buns this time and grass fed beef.

Do you like avocado burgers? Do you ever get so caught up in the daily grind that you have to improvise come dinner time?
